While you sadly can't visit Luke's Diner this fall, you can take a nod from Luke and make pumpkin pancakes. He offers them to the Gilmores in Season 4, serving them with homemade cinnamon butter (gasp!). This recipe uses a blender to get a smooth batter.

To go with the pancakes, duh. You can also slather it on muffins, waffles, or toast.

Make your own "magic risotto" à la Sookie St. James. This autumnal version uses fresh pumpkin or butternut squash. And once you marry it with the browned butter and sage? Divine.

The Gilmore Girls love their Chinese takeout. This weeknight-friendly dinner is flavored with ginger, dried chillis, and Sichuan peppercorns. Eat the leftovers cold, straight out of the fridge, for the authentic Gilmore experience.

Is it just me, or did it seem like Lorelai was always bothering Luke for a donut? Made with real apple cider and rolled in cinnamon sugar, this recipe is such a delight.

RIP to Lorelai and Sookie's catering business, where Sookie thought kids at a Lord of the Rings party would eat green mac 'n' cheese ("Why is it green?” “Because I made it with a jalapeño-chipotle cream sauce!") While this mac and cheese isn't green, it does have a Cheeto topping, which seems like something both Lorelai and Sookie would appreciate.

Waffles are another Luke's Diner specialty. The batter is made from blended oats, and you can also use it to make pancakes. Another excuse to use your homemade cinnamon butter!

Recipe: Gluten-Free Pancake And Waffle Mix

Soup season is officially back — all rejoice! To celebrate, try this creamy mushroom soup made with robust Hungarian paprika, inspired by the soup Sookie makes for Emily's DAR meeting. Use vegetable stock to make it vegetarian.

Rory's breakfast of choice. Don't be surprised if you enjoy these spiced pastries more than the grocery store version.

Recipe: Homemade Brown Sugar Cinnamon Pop Tarts

Apple tarts are Lorelai's favorite dish at the famed annual Gilmore Christmas party. These mini tarts are made with store-bought puff pastry in a muffin tin.

Make Mrs. Kim proud: eat the tofurkey. Fit for a vegan Thanksgiving, this recipe has several sources of flavoring, including poultry seasoning, soy sauce, and nutritional yeast.

Mock turtle soup, mock turtle soup! (No, not turtleneck soup.) Try Richard's childhood comfort meal, which thankfully, contains no actual turtles. Instead, this old-fashioned recipe uses ground beef, hard-boiled eggs, and, head-scratchingly, ginger snaps.

While Luke bakes Rory coffee cake for her birthday in Season 1 ("You old softie!"), you can make this scrumptious snack cake anytime. Good luck stopping yourself from picking off the brown butter streusel topping.

Remember when Rory left her mom's meatball from her anniversary dinner with Dean in the car? Made with store-bought marinara sauce, this recipe is so easy, even Lorelai could make it. Not that she'd even try, let's be real.

Coffee, coffee, coffee! Skip the Starbucks line and try this homemade version. You'll be caffeinated and in the fall spirit.

One of the side dishes served at Luke's Thanksgiving. Don't shoot the messenger, but the word "yam" is synonymous with sweet potato in the US, so that's what you use in this recipe.

A quintessential fall beverage you can make as an ode to Stars Hollow's Apple Cider Parade (the one where Miss Patty dressed her dancers up like apples). Once this warm, spiced drink hits your lips and Carole King's "Where You Lead" starts playing on your TV, the season has truly begun.

Remember Rune, Jackson's weirdo cousin? Sookie makes Lorelai orange-glazed muffins to try to convince her to let him stay at the inn. The recipe makes a dozen muffins, which take only 17 minutes to bake.

"I'm not quite sure what other way to say 'no walnuts in the salad' except to say 'no walnuts in the salad!'" While Emily might be disturbed by this dish, you'll love it. In addition to the nuts, it has dried cranberries and gorgonzola and is tossed with a delicious maple shallot dressing.

An alternative to the disgusting banana toast Emily used to feed Lorelai when she was sick as a kid. The banana is incorporated directly into the egg mixture for a sweet, golden brown morning treat.

Take a cue from Emily and Gilmore and serve stuffed mushroom caps at your next fall party. The filling is made from a combination of shallot, garlic, mushroom stems, and cheese, and the finished appetizer is topped with panko for crunch.

Babette ate oatmeal! And now you can, too. Flavored with maple syrup, cinnamon, ginger, and vanilla, this warm, spiced breakfast is practically autumn in a bowl.

Do Lorelai proud — don't skip the Thanksgiving rolls! This is a good beginner recipe for those new to baking with yeast.

Take the deviled eggs! And throw them at Jess's car! This appetizer has the classic deviled-egg flavor but uses a teaspoon of paprika for a pumpkin-like color.

If coffee isn't your thing, but you still want to get into the Gilmore spirit, you can't go wrong with a warm cup of chai. In fact, it's Christopher's drink of choice. Just don't expect Luke to know how to make it.
